For 6 servings,

  • 1 Kg of potatoes
  • 250g of salted cod
  • Scallions, onions
  • 1/2 kg of oranges,
  • 2 boiled eggs,
  • Black Olives,
  • Olive oil.


The cod is soaked in water for 48 hours to desalt completely, changing the water occasionally. Drain very well and roast. Then shred the cod and remove the thorns.

Peel and boil the potatoes. Cut them into think slices.

Peel the oranges and cut into small discs.

Chop the scallions and the boiled eggs.

Assemble the salad, first adding the potatoes slices, then the oranges and the cod. Put above the scallions, olives and boiled egg. Salt and olive oil. Add chopped parsley on top if you like.

It is served cold.
