Restaurant Report: Dstage in Madrid
When Spain became an avant-garde culinary destination at the end of the 1980s, it was mostly thanks to chefs in the Basque Country and Barcelona. Today, however, the country’s post-molecular-cooking gastronomic credentials are being won by a constellation of nervy young chefs working in Madrid. “There’s been a 360-degree change here,” said Diego Guerrero, the chef who just won a star in the 2015 Michelin guide for his new restaurant, Dstage. “Today, the city is filled with young people taking chances.”
